CYNTHIA'S BBQ SUGAR AND SPICE SALMON
1/4 cup Sugar
1 tsp. Dry Mustard
dash Cinnamon
1 tbs. Paprika
1 tsp. Cocoa Powder
1/4 to 1/2 tsp. Chili Powder (New Mexico for spicy, California for mild)
1 tbs. Cumin
2 tsp. Black Pepper
1-1/2 tsp. Coarse Salt
4 ea. 6 oz. Salmon Fillets
Olive Oil
Heat BBQ Grill.
Combine all spices.
Dip Salmon in olive oil and then dredge in spices, coating both sides and edges.
